I decided to start a blog about my experiences with a diabetic diet. I was recently diagnosed with insulin resistance or pre-diabetes. I am currently taking Metformin, which I believe is a popular medication for patients with type 2 diabetes. I was sent to a dietician by my doctor who has put me on a diabetic diet.
I originally ate vegan. However, after my first visit with my dietician, I realized how unhealthy I was eating on my vegan diet. It was difficult to believe. Faux meats sold as vegan are incredibly high in carbohydrates and calories. I realized taking 15+ credit hours, taking care of a home, and doing a vegan diet on top of a diabetic diet was outside my threshold of time and energy. So, instead of continuing my vegan blog, I decided to make my diabetic blog.
I always had a hard time losing weight. When I switched to a vegan diet, I never lost any weight. It didn't make sense. I could not figure out what I was doing wrong. After I was diagnosed, my dietician explained that insulin resistance could be a big factor in my lack of weight loss, and more than likely weight gain. With insulin resistance, the body does not know how to use insulin to process the sugar in the bloodstream. So I had a lot of sugar in my blood, and since my body didn't know what to do with it, it just stored it all.
So that's the story, and here I am to eat healthier and shed some pounds to help my body get better!
I figured this will be a good place to keep my weight updates.
